Additive Free Tequila. What is Additive-Free Tequila?

What are additives or abocantes in tequila?

Why aren't more tequila brands using Certified Organic Agave?
Many tequila brands buy agave from the open market not knowing where it came from, what chemicals may have been in the soil, what chemicals were sprayed on the agave for almost a decade as the agave matured. Tequila brands focus on the agricultural side, by growing Certified Organic agave without the use of harsh chemicals, pesticides, herbicides, synthetic pesticides... Chemicals like Tebutiuron, Bromacil, Diuron, Acetochlor, Imazapic... These are chemicals that don't need to be sprayed on the agave that takes almost a decade to mature. They should not be present in the soil that the agave grows in, and should not be present when jimadores (skilled workers) who hand harvest the agave spend 12+ hours in the agave field not having to worry about getting sick. Yeast is added in the fermentation process of some tequila brands. Hermosa Organic Tequila does not add commercial yeast, the mash left to sustainably wild ferment for 100 hours using open-air vats with natural airborne yeast found in the area, no commercial yeast is used at any point. In other spirits (Rum, Bourbon, Cognac...) and the wine world yeast is considered an additive. Some people are allergic to yeast, some people have an intolerance and get headaches and stomach aches. Yeast adds aroma and flavor, many times the bitter, nut, apple... flavors in tequila that are present from adding yeast. The amount of yeast added not just to ferment but to speed up fermentation is unnecessary.

Most tequilas use American Charred Oak Whiskey Barrels they do add flavors and aromas from the oak, charr, prior bourbon that was removed. As some consider these additives some tequila brands uses barrels from bourbon companies that do not use GMO corn in their recipes. Other tequila companies are using wine, finished bourbon, rum... barrels that add unique flavors to tequila brands.
